QNU Teachers and Students Published Research in Top International Journal in Food Science and Technology

Recently, Food Hydrocolloids (IF: 9.15, the Q1 of the Chinese Academy of Sciences, TOP Journal), a top international journal in the field of food science and technology, published online the latest research results of A/Prof. Guo Juanjuan, a member of the food science and engineering team at the School of Ocean and Food Science, QNU. The title of the paper is Physicochemical Dynamic Changes and Differences of K-Carrageenan in Different Vehicles (Aqueous and Casein Solution) During in Vitro Gastrointestinal Digestion. QNU is the first author affiliation. Zhu Siliang, a joint training master student, is the co-first author of the paper, and Professor Pang Jie with Fujian Agriculture and Forestry University is the corresponding author. The research was supported by National Natural Science Foundation of China (Grant No. 32001625), National Natural Science Foundation of China (Grant No. 41706139), Provincial Natural Science Foundation of Fujian (Grant No. 2020J05159) and Brain Gaining and Scientific Research Starting-up of Quanzhou Normal University (Grant No. H19007).

Dr. Guo Juanjuan is an associate professor at the School of Ocean and Food Science of QNU. In her Ph.D. candidature, she has been supervised by Professor Zheng Baodong who is the New Century National candidate of the Ten Million Talents Projec, an expert with special government allowances of the State Council, and an academic leader of Food Science and Engineering in Fujian. Dr. Guo’s main research interests are separation, preparation and functional activity research on marine red algae natural active components (saccharides), proteomics and metabolomics. She has presided over one project supported by National Natural Science Foundation of China, one by Provincial Natural Science Foundation of Fujian, participated in two projects by National Natural Science Foundation of China, in one Fujian Provincial Major Project as well as in one Fujian Provincial Science and Technology Project. She has published 11 academic papers as the first author, including 7 papers in SCI, 4 papers in Chinese core journals, and has been granted 6 national invention patents (2 as the first inventor and 4 as the second inventor). Zhu Siliang is a master student jointly trained by Quanzhou Normal University and Fujian Agriculture and Forestry University, and his supervisors are A/Prof. Guo Juanjuan and Prof. Pang Jie.
